Gil was a steal. The Yankees DFA'd Jake Cave and traded him to the Minnesota Twins for Luis Gil, who was in the lower minors at the time, and the Twins didn't think he would develop into a starter at all. Not sure if that would make Gil eligible for your Yankees/Twins list.
Ron Davis was a notable Yankee who later became a Twin, as were Gary Sanchez and Gio Urshela. Going the other way, the forgettable Josh Donaldson, although much earlier in his career, Donaldson WAS great. The Yankees just got him way too late in his career.
